Bacon Chicken Thighs

A trip to the Supermarket led me to purchase a Delish Magazine with Keto Comfort Foods. I am declaring that I am not on a Keto diet, but I do eat that food from time to time. I usually just use Pintress for new recipes, but I love the convenience of the magazine maybe I am old school. There are a variety of recipes, but I decided to make the Bacon Chicken Thighs first.
HOW DO YOU MAKE BACON CHICKEN THIGHS
To make this dish you will need:
4 slices bacon
1 1/2 1b. bone-in, skin-on chicken thighs
Salt
Black Pepper
1 small red onion, chopped
8 0z. mushrooms, sliced
2 cloves garlic, minced
3/4 cup low sodium chicken broth
3/4 cup heavy cream
1/3 cup Parmesan
Juice of 1/2 lemon (I used lime)
Freshly chopped parsley for garnish (I used cilantro)
In the recipe the chicken was seasoned with salt and pepper, but I love more flavor, so I seasoned my chicken with my homemade green seasoning.

I used lime and cilantro instead of lemon and parsley because I already had those in my kitchen. After returning the chicken to the pot, I let it cook for about 25 minutes instead of 10 minutes as I wanted it really tender, but you can follow the recipe or adjust to your preference.
In a large skillet over medium heat, cook bacon until crispy, about 8 minutes. Drain slices on a paper towel - lined plate and reserve about 2 tablespoons fat in skillet.
Season chicken all over with salt & pepper (or marinate in your favorite seasoning for about an hour). Increase heat to medium-high, then add chicken to skillet skin-side down. Cook until golden and seared, about 5 minutes, then flip and cook until seared on the second side, about 5 minutes more. Remove chicken from skillet and set aside.
Add onion and cook until beginning to soften, about 5 minutes. Stir in mushrooms and season with salt and pepper. Cook, stirring often, until golden, about 5 minutes. Stir in garlic then add chicken broth, cream, Parmesan, thyme and lemon juice. Bring mixture to a simmer and let cook 5 minutes.
Return chicken to skillet and simmer until chicken is cooked through and sauce has thickened slightly, about 10 minutes more.
Chop bacon and sprinkle over chicken. Sprinkle parsley for garnish.
