Loaded Cauliflower Bake

I must admit that eating vegetables was not always a daily for me but now that I am discovering so many ways to make them interesting, it's a joy! I especially love cauliflower because it can be used in so many ways!


Cheese is another LOVE of mine and I have learned that when you grate the cheese off the block, the dish taste better than using the prepacked grated one, now you know!


This is another dish taken from my Delish Keto Magazine and is 293 calories, just in case you are counting your calories.


HOW DO YOU MAKE LOADED CAULIFOLWER BAKE

To make this dish you will need:

  • Salt

  • 2 small heads cauliflower, cut into florets

  • 6 tbsp. butter, plus more for buttering the dish

  • 1/2 cup heavy cream

  • 3 cloves garlic

  • 2 cups shredded cheddar cheese divided

  • black pepper

  • 6 slices bacon cooked & crumbled

  • 1/4 cup sliced green onions

I did not have any green onions, AGAIN, but dish was still delicious!

  1. Preheat oven to 350 degrees. In a large pot of salted boiling water, blanch cauliflower, 3 minutes. Drain and squeeze cauliflower to get rid of excess water.

  2. Butter a 9" - x 13" baking dish. Add half the cauliflower and pour half the heavy cream over florets. Season with salt and pepper, then dot with half the butter and sprinkle with half the garlic, half the cheddar, half the bacon and half the green onions. Repeat with remaining ingredients.

  3. Bake until cauliflower is tender and cheese is melted, 30 minutes.

Enjoy with your favorite protein, I had mine with some spicy chili Chicken Breast.
