Broccoli Salad

I enjoy salads! They are always so fresh, and I love how creative you can get with a salad, plus, it healthy! This recipe is taken from my Keto Magazine and is only 422 calories.


HOW DO YOU MAKE BROCCOLI SALAD

To make this dish you will need:

  • salt

  • 3 heads broccoli, cut into bite-size pieces

  • 2/3 cup mayonnaise

  • 3 tbsp. apple cider vinegar

  • 2 tbsp. freshly chopped chives

  • 1 tbsp. Dijon mustard

  • black pepper

  • 1/2 cup shredded cheddar

  • 1/4 red onion thinly sliced

  • 1/4 cup toasted sliced almonds( I used sliced raw almonds)

  • 3 slices bacon, cooked and crumbled

  • cranberries (optional)

I forgot to grab chives at the supermarket, so it wasn't in my salad, and I decided to add cranberries. Since cranberries is not part of the original recipe I listed it as optional, but it was a great add to the dish.

  1. In a medium pot or saucepan, bring 6 cups of salted water to boil. Meanwhile, fill a large bowl with ice water.

  2. In boiling water, cook broccoli until tender, 1 to 2 minutes. Using a slotted spoon, remove florets from pot into the bowl of ice water. When cool, drain broccoli in a colander.

  3. Prepare dressing: in a medium bowl, whisk together mayo, vinegar, chives and mustard. Season to taste with salt and pepper.

  4. In a large bowl, combine broccoli, cheddar, onion, almond, cranberries and bacon. Top with dressing and toss salad until ingredient are combined evenly coated in dressing. Refrigerate until ready to serve.

Enjoy with your favorite protein. I had mine with some Garlic Butter Lamb Chops.
