Creamed Spinach-Stuffed Salmon

I love Salmon, it is very easy to cook, and the skin has a high concentration of omega-3 fatty acids. Omega-3 fatty acids helps promote brain health, but I also learned from my esthetician that it helps balance your hormones. Women who take omega-3 fatty acids during the first 14 days of their cycle has less breakouts and it leads to healthier, glowing skin.
I decided to try this Salmon dish from my Keto Delish Magazine. Keto and Omega-3, sounds like a win, win to me!
HOW DO YOU MAKE CREAMED SPINACH-STUFFED SALMON:
To make this dish you will need:
4 (6-0z) salmon fillets
salt
black pepper
4 oz cream cheese softened
1/2 cup shredded mozzarella
1/2 cup thawed frozen spinach (I used fresh spinach)
1/4 tsp. garlic powder
pinch crushed red pepper flakes
2 tbsp. extra-virgin olive oil
2 tbsp. butter
Juice of 1/2 lemon
The recipe used salt and black pepper for seasoning, but I marinated the salmon in soy sauce and my green seasoning overnight and sprinkled the salt and black pepper while cooking. I also had to cook in two sessions as my pot couldn't hold the four fillets at once.

I used fresh spinach which I cooked in a bit of olive oil until wilted. This worked well for me as it helped soften the cream cheese mixture.

Season salmon all over with salt and pepper. In a large bowl, mix together cream cheese, mozzarella, spinach, garlic powder, and red pepper flakes.
Using a paring knife, cut a slit in each fillet to create a pocket. Stuff pockets with cream cheese mixture.
In a large skillet over medium heat, heat oil. Add salmon skin-side up and cook until seared, about 6 minutes, then flip salmon. Add butter and squeeze lemon juice all over. Cook until skin is crispy, 3 minutes. Serve warm.
