Spinach Medley

I grew up in a culture where meat was an important part of a meal and rice as a main dish meant a full plate of rice with vegetables on the side. Even though we had everything organic as most people grew their own food, sometimes we had rice or ground provision with chicken, no vegetables. When we did have vegetables, we knew to just eat everything that was on our plate. So imagine me as a mom now trying to incorporate vegetables into my family's meal and making it tasty.
I was having a conversation with a friend one day and she was making a side dish with spinach, tomato and mushroom. I asked her how she made it and after a quick review with her, I decided to try it. I ended up putting my own spin on it by adding my secret ingredient (well not so much a secret) and called it a Spinach Medley.
HOW DO YOU MAKE SPINACH MEDLEY
To make this dish, you will need:
Spinach
Tomatoes
Mushrooms
Onion
Garlic
Oil ( I used grapeseed oil)
My secret Ingredient (you have to read to find it out)
Start by dicing the onions, garlic and tomatoes, slice the mushrooms to your liking. Sauté onion and garlic in oil, then add mushrooms and tomatoes. Cook for about 3 - 4 minutes then add spinach, cover. As the spinach starts to wilt, I add my secret Ingredient, which is Lemon Pepper seasoning. I discovered this seasoning about 6 years ago, when a co-worker of mine told me she sprinkles it on her boiled eggs. I introduced it to my son and he is obsessed with it, that is the only way he eats his boiled eggs.
The first time I made this, my intension was to season with salt and black pepper. However, when I opened my cupboard, the first thing I saw was the lemon pepper seasoning and I thought .... why not? I love the tangy flavor it adds, if you are not a fan, you can always season with salt and pepper. After seasoning let simmer, then serve!
